Hi everyone!

I'm about to start p90x and would really like to follow the suggested meal/nutrition plan but I feel like there aren't a lot of options that don't involve meat and dairy. I'm looking for suggestions about how I could develop an alternative menu.

Here is the email I sent you.

Missy Costello, Tony’s chef wrote an ideal vegan diet. I wrote it down hoping that one day I’d get to share it. You are my first taker! ;)
In the vegan diet you will get your fat, carbs and proteins sometimes from the same source, so just watch the calorie intake and try to eat as clean as possible.
Here is Missy’s suggest
A.m. H2O upon waking up
Drink greens mixture about 30 minutes after waking
Breakfast: High fiber, whole grain cereal
Snack: Nuts (handful)
Lunch: Protein and green veggies
Snack: Fruit and Veggie
Dinner: Grains and Veggies
Optional: Fruit, Veggie Starch

You’ll get your protein from Quinoa, legumes, nuts, you’ll also get your healthy fats from nuts too. Don’t worry too much about how to label the food as to get in a nice, healthy variety.
Sub in legumes and nuts for proteins and green veggies for dairy.

So here are the first two days menu....I'm trying to follow the portion plan for p90x.

Day One:

Breakfast: Chai tea with soy milk
Lunch: wheat roll with hummus, grilled eggplant, tomatoes, lettuce, pickle, and jalapenos
Snack: banana and soy milk
Dinner: cucumber sushi roll, avocado sushi roll tiny portion chocolate sorbet

Day Two:

Breakfast: oatmeal, raisins, jason's peanut butter pack
Snack: Chai tea with soy milk
Lunch: steamed veggies
Snack: vegan protein bar (18g of protein ^^)
Dinner: Salad (lettuce, bell peppers, cucumbers, edamame, corn, tomatoes, and balsamic vinaigrette), banana with jason's Peanut butter pack, and chocolate soy milk

What do you think? Is this okay or should I change some things?

Try this simple plan. Breakfast: banana muffins, fresh fruits. Lunch: Spinach salad with orange sesame dressing. Dinner: Mock Meatloaf, Creamy chive mashed potatoes with gravy.
