Just looking for some good recipes that will leave leftovers to pull out. I do not have the nutrition guide I know there are some in there. SO any that you love?

Here is my favorite thing to make:
My personal recipe for Awesome Chicken Taquitos
You will need VERY thin CORN tortillas NOT the ones you buy on the bread aisle shelf or the thick ones in the refrigerated section. Get the super thin ones in the refrigerated section and check the serving allotment. My brand (Art's made locally) allows 5 tortillas to fit into the "carb portion".
Cook chicken breast in the crock pot all day or you can just boil it in chicken bouillon and then shred it.
Add finely diced hot serrano peppers and a bit of salt to taste.
Spray the tortillas very lightly on both sides with olive oil cooking spray and heat them for about 45 sec in the microwave so they are nice and pliable.
Place 1oz of the mixture into a tortilla (you can adjust this however you need to) and roll tightly.
Place on a baking sheet and into the oven until crisp. Everyone's oven varies in temperature. I set mine at 400 and I warn you to watch them closely cause they can burn fast.
I make and serve with my guacamole:
avocado, salt, serrano peppers, roma tomato, red onion, lime juice
I'm experimenting with making a whole bunch of these and freezing them. Haven't tried to heat them up yet but will probably work at a lower temperature.

Okay, so here is something else I like to make just about everyday. You have to have a great tasting protein powder or it probably won't be very good. And...remember people this is not a Betty Crocker Brownie so if that's what you're expecting when you smell it cooking you will be sorry lol!
Protein Pancake
1 Scoop Dymatize Rich Chocolate Protein Powder
2 egg whites
1/8 tsp baking powder
splenda to taste
water
Spray a small 6" frying pan with olive oil spray and heat on med high. Mix all of the above to a pancake batter consistency. Pour mixture into pan and let it cook until it has some bubbles and the edges are easily lifted. Flip and let it cook on the other side but it is best if it doesn't cook all the way through.
That's it, simple and a different way to get your protein powder.
