What is your favorite healthy food?

Pre-workout meal?

Post workout meal?

Snacks?

I love to hear other peoples new and fresh ideas about certain dishes they like or have maybe invented themselves.

Usually I workout on an empty stomach so I don't have much of an idea of a pre-workout meal. Post for me would be (after recovery drink) Grilled Chicken breast or turkey burger with red mashed potatoes. I cook my potatoes, then add 1/2 cup of cottage cheese (instead of sour cream or butter) dill weed, salt and pepper to taste and couple table spoons of skim milk. Just about my favorite way to eat potatoes right now. Add a large spinach salad to it or your chicken to the salad and its a great clean meal.

My favorite snack is cottage cheese and lowfat blueberry yogurt mixed together. Yum

I also like shakes for a snack. My favorite is 1/2 cup of oats, 2 scoops of protein powder, 1/2 table spoon of peanut butter, and a dash of cinnamon.

Personally, I LOVE spicy food. Some of my favorite meals are

Egg White omelets
Protein/ Oatmeal (Insanity meal)
Gluten free/dairy free pancakes

Lunch
Sushi (brown rice)
Sashimi with Miso soup
Turkey Sandwich

Dinner
Anything Italian
Like Turkey Bolognese
With Whole wheat pasta

Marinara (Home cooked)
Drained organic diced tomatoes in water
Puree them with your blender
Add 1 tablespoon Organic Cold pressed Olive oil
Garlic to taste
It has to be plain because of my kids.
Let the water evaporate to a nice think sauce or gravy as those east coast Italians say! (SUGO)

I like to make Turkey, chicken or lean ground beef wraps
Cook the meat
For Thai Style Add:
Chopped onions, tomatoes, carrots, cucumber, cilantro
Make a topping Cayenne pepper,
Equal parts soy sauce and lime
YUM

For Mexican
Blend the salsa and pour it over the onions, tomatoes, & colored peppers

ANYTHING BBQ is super good

Snacks for me are
Hummus and Carrots
Half Sandwich
1 cup rice and beans

As you can see. I GOTTA Eat all the time!

Remember with P90X we get to have
Corn tortillas
Hummus
Whole grain Pasta

I'll add more as I think about it!

Thanks for the Marinara sauce recipe. I have been wanting to make one homeade that was healthy.

if I have a low carb day and have the carbs to spare, my favorite dessert is:

1/2c blueberries
1/2c blackberries
1/2c raspberries
2tbsp whipped cream

it's really vitamin packed, it's just sweet enough and it feels like a TOTAL indulgence when it's only like 160 cals.

Other than that I find I'm really diggin' egg white omelets. they travel well (I take one to work every morning so I can have breakfast at work). Fav Recipe there is:

1c egg whites
1 med bell pepper (cut into small cubes)
2 tbsp salsa (low sodium)
1/2 oz hard Parmesan cheese - grated

sautee the bell pepper to soften it a bit. add the egg whites. once the egg whites firm up a bit, add the salsa to the mix and cook until everything is just about solid. Sprinkle the parmesan cheese over the omelet and fold.

slap it in a tupperware container and you're good to go. Slap it in a nukerwave for 35-40 secs and it warms right up! Love it. Fav Weekday breakfast EVAR.

Was craving this and stumbled upon a pretty healthy meal! figured I'd share it:

This is a single serving recipe that is not only filling but has tons of substitution opportunities:

Stuffed Bell Pepper


1 medium or large red bell pepper (or any color really)
1 can tuna in water (drained)
1oz Parmesan cheese, hard (hand grated)
1 tbsp Miracle Whip
2 stalks celery (approx 5 inches long)


Cut the top off the bell pepper, take the seeds out and cut the ribs out. Knock out any seeds that fall into the pepper.
Dice the celery into small pieces
Mix the drained tuna, Miracle Whip, 1/2oz Parmesan cheese and celery until well integrated (it will look dry)
Stuff the bell pepper with the tuna mixture and pack it in carefully so as to not break the pepper. (it's possible that not all the tuna mixture will fit)
Top the tuna mix with the other 1/2 oz Parmesan cheese.
Stick the whole thing into an oven (or toaster oven) set at 450 degrees for 15-20 minutes. This should heat the whole thing through. If you want to toast the top of the cheese, turn on the broiler and broil for 2-3 minutes.


Substitutions:


Don't like bell peppers? Try a Portabello Mushroom cap. Scoop out the gills and pack the tuna mix on. If you have a hamburger former, you can form the tuna in that to make things easier
Not a fan of tuna? Try canned chicken, oysters or crab meat!
Don't have a problem meeting your fats for the day (I do)? Drop the Parmesan cheese!

I have to have gluten and soy free foods so my options can sometimes be a little different or limited.

I like stuffed zuchini;
scrape out the insides and grate them, mix with Quiona, broccoli. put stuffing in shell and top with sprinkled parmesean. bake for 20 min or so. YUM!

egg salad;
grated eggs, pickles, dill and cottage cheese. put in corn tortilla or whole wheat pita (but I can't have those anymore:()

curried chicken:
cook diced chicken, let cool. dice celery and cashews & add
dressing: mayo (would be good with cotteage cheese too), lime juice, LOTS of curry
mix it all together!

chicken salad:
canned chicken (like tuna), mayo or cottage cheese, pickles, tomatoes, broccoli. i dip and eat with gluten free crackers.

string cheese

quiona & black bean salad:
rinsed & drained black beans, 2 c quiona, diced tomato, broccoli
dressing: 1 TBS melted coconut oil, 1 tbs agave nectar, juice of 1 fresh lime
mix dressing them stir over other ingredients
also good to add in corn:)

when I could have it I loved to have a protein shake - chocolate protein powder with frozen strawberries & coconut water

Bekkijo I've discovered brown rice cakes. They are gluten free, and wonderful! I put a little PB & J or hummus on them for the perfect snack. I'm assuming corn tortillas have gluten?

I'm a fan of the Insanity Sandwich l.o.l. anyone else a fan? I"m a skeptic of this sandwich but it's in the guide so i guess it's cool..

2 slices of Wheat Bread, 1 teaspoon of natural peanut butter, some slices of banana.. 300 calories.
