Simple & Healthy Vegetable Recipe

Many people struggle with making healthy food. They believe it to be time consuming and expensive and don’t know where to start, especially if it’s a big change for them. Here’s a super easy and really healthy vegetable recipe that I whipped up on a Sunday afternoon while watching football.

Simple & Healthy Vegetable Recipe | TheFitClubNetwork.comYou start with some fresh veggies. Go with whatever you like or what you have in the fridge. This time around, I’m using carrots, Brussels sprouts, onion, yellow squash, and zucchini. After I’ve cleaned and chopped them up, I steam them for about seven minutes. I don’t want to fully cook them. The idea is just to soften them up a little bit and get them ready for roasting.

While they are steaming, I make the marinade. I typically use equal parts olive or coconut oil and add fresh garlic or garlic powder, salt, and pepper to taste. There is no right or wrong. I blend it all up so it mixes into a thick liquid.

The next step is to place the veggies in a Pyrex dish and pour the marinade over them. The veggies are warm and they soak up the marinade quickly. I let all that sit for about 45 minutes. On occasion, I’ll do this the night before and let everything sit in the fridge overnight in a Ziplock baggie so the flavor really soaks in.

Now, it’s time to roast them. I start by preheating the oven to 400 F. I let them cook for about 30 minutes, but you can vary the time on roasting and steaming depending on the texture you like your vegetables. Again, no right or wrong way here. The longer you cook them, the softer they will get…just pull a little out at a time and see how they are coming along as they cook.

After they’re roasted, you can also broil them for a little while if you like them crispy. I love them done this way. Make sure you keep an eye on them or the broiler will burn them! I also pull out the Pyrex every few minutes to stir the vegetables. If you don’t do that, only the ones on top will be browned.
