Here is a delicious and healthy quinoa salad recipe that came from the founder of Karma Chow, Missy Costello. This is the perfect summer salad with a light vinaigrette!

Before Missy got super popular, you used to be able to go to her amazing cooking classes. She really is an amazing vegan chef!

Healthy Quinoa Salad Recipe Ingredients

So, to make Missy’s healthy quinoa salad recipe, here’s what you’ll need:

  • Quinoa
  • Black beans (canned are okay)
  • (1) mango
  • (1) 1 red pepper
  • Cilantro
  • Onion (optional)
  • Unfiltered apple cider vinegar
  • Extra virgin olive oil

Remember, to get ORGANIC ingredients! Sometimes, you can find pre-chopped mango, red pepper, and onions at your local grocery store (like Trader Joes!])

Healthy Quinoa Salad Recipe Instructions

The first thing you’ll do is cook the quinoa. Then, you’ll chop the mango, red pepper, and onion (if you’re using it).

One of the things I’ve noticed when cooking quinoa is that it doesn’t ever seem to be cooked all the way. There is some water at the bottom of the pan. Just let it sit covered for a while and it will eventually get absorbed, leaving the quinoa nice, light and fluffy. Quinoa is such a delicious and protein-packed base. I’m SO happy that Missy Costello introduced me to it!

Next, I’m going to add a can of beans, then the bell pepper, most of the cilantro (I like A LOT of cilantro), and the mango and stir away.

The vinaigrette is super easy. Just to keep it extra simple, I have my little tablespoon measurer and I’m going to add a tablespoon of olive oil and a tablespoon of unfiltered apple cider. Of course, you can always add salt and pepper to taste. As it mixes in, the quinoa will take on these flavors.

This is a fabulous savory side to bring to a potluck. You can easily add some steamed or poached chicken and make it into a healthy meal!
