Healthy Sweet Potato Soup Recipe

My grandmother totally loves soup. So I’ll be whipping up this healthy sweet potato soup recipe and bringing her some, because she’s not feeling so well today and I want to see her smile. I’m also hoping all the fresh and healthy veggies in the soup will perhaps help her feel better.

First I want to talk a little bit about the health benefits of sweet potatoes.

Health Benefits of Sweet Potatoes

Sweet potatoes are loaded with nutritional benefits. They’re high in Vitamins B6 and C, excellent sources of iron, magnesium and potassium, packed with fiber, and their bright orange color means they’re full of beta carotene, too.

I especially love that they take on the flavor of any seasonings or other tasty ingredients you add to them and they satisfy my craving for sugar when that rears its ugly head.

Let’s Make My Healthy Sweet Potato Soup Recipe

This is a fairly simple recipe with only three ingredients—carrots, sweet potatoes, and cashews. Yep, cashews. They are what give it the extra creamy texture and extra awesome flavor.

First and foremost, you’ll want to soak a decent amount of cashews in water for about 1-1/2 hours. You CAN use cashew nut butter, which will add to the overall creaminess of the soup, however I personally prefer using the whole cashews.

The sweet potatoes and carrots need to be cleaned and chopped, then steamed until soft. After they’re cooked, you’ll need to mash them up. I use my Vitamix to do this, but you can use whatever type of blender or food processor you have. Heck, you can even do it the old-fashioned way—by hand!

The next step is to take half of the blended veggies, place them in a pot and cook them over medium heat. The other half that you left in the blender will be blended with the soaked cashews. As you will see in the video, the color and taste of the mix changes as you add the cashews.

After the rest of the veggies and the cashews have been blended, add it to the rest of the soup that’s slowly cooking on the stove. Season it to your liking, and voila—it’s ready to be served!
