  1. Place cauliflower chunks and garlic in a steamer basket over boiling water. Tightly cover the pot and steam until the cauliflower is very tender, about 12 to 15 minutes.
  2. Place the cooked cauliflower and garlic in a food processor. [You can do it in batches if your processor is smaller.] Add Greek yogurt, oil, butter, Parmesan cheese, salt and pepper. Pulse several times until somewhat mixed and then process until smooth and creamy.
  3. Transfer to a serving bowl. Garnish with parsley or chives, if desired. Serve hot.

* What is ghee??? Ghee is a type of clarified butter that’s prepared by simmering butter and removing the residue. Sometimes spices are added for flavor. It is used in Ayurvedic medicine and cooking due to its purported health benefits. You can usually find it in the ethnic section of larger mainstream grocery stores and at Trader Joes.
