Monica’s Healthy Salsa Recipe

Do you love salsa? I must confess, my love of salsa borders on addiction! Especially with chips. BUT, chips aren’t on the menu around here—that does NOT mean I don’t use salsa. It’s my little burst of flavor on eggs, tacos, any kind of meat or fish, even salad. I’m sharing my healthy salsa recipe with you, so you can revel in the same experience. This pico de gallo is totally compliant with P90X, Insanity, Body Beast—really nearly any healthy eating plan known to man.

How to Make Pico de Gallo

The inspiration behind this dish is the plethora of fresh and aromatic veggies I get at my local farmer’s market. Making your own salsa is a lot cheaper than buying it – AND has only the purest of ingredients.

One of my secrets is the base. The preparation of it is EASY. All you have to do it boil the tomatoes, peal off the skin when they’re done, add the jalapeño, and purée them in the blender. Remember, the more jalapeño seeds you leave in, the more heat you’ll get. Easy, right?

Health Benefits of Tomatoes

Besides being delicious, there are some health benefits to fresh pico de gallo.

Tomatoes are good for you! The primary benefit comes from lycopene, which is what gives fruits and veggies like tomatoes, watermelons, and pink grapefruits their red color. It prevents heart disease, several forms of cancer, cataracts, and asthma. Tomatoes have a lot of lycopene, which is why 85% of dietary lycopene in North America comes from tomatoes and tomato products [juice, paste, etc.]. Tomatoes are also good for bone health and contain a good amount of Vitamin C.
