Healthy Taco Recipes & Buffet Style Meal Prep

Do the words “Taco Tuesday” make you drool and excite you like no other? If so, I’m right there with you! Lots of people love tacos, but they aren’t always good for you. We wanted to share some healthy taco recipes so you can enjoy your favorite meal guilt-free and keep up this awesome weekly tradition!

There are tons of healthy taco recipes that are easy to make, delicious to eat, and won’t leave you feeling like you need to run a marathon to burn off the calories.

Come along as we take a look at some great healthy taco recipes…

A Healthy Spin on Tacos

Tacos loaded with too much meat, beans, and cheese taste great, but they don’t get a good health grade.

Don’t despair! You just need some modified recipes that use more veggies and less cheese, sour cream, and other heavy toppings.

Take a look at these recipes, and you’ll realize there’s definitely still hope for Taco Tuesday!

1. Steak Tacos with Guacamole

You’re going to LOVE these tacos! The meat takes an hour to marinate, but you can save time by putting it in the marinade the night before, then take it out of the fridge when you’re ready to grill or sauté it.

Preparing the guacamole and sautéing the veggies only takes a few minutes. Guacamole is not only delicious, but it’s a healthy fat! And, I bet you won’t even notice there’s no cheese on these tacos!

2. Skillet Veggie Tacos

For this easy and healthy taco recipe, we suggest chopping the veggies the night before and storing them in small containers.

Get even more organized and use the Buffet Style Meal Prep system discussed below. It makes cooking these after work a snap. Leftovers stay in the same containers so clean-up is a breeze too.

The feta adds a delicious contrast to the warm vegetables.

3. Shrimp Tacos

These tacos are for shrimp lovers (like us), which is a healthy substitute for red meat. It’s high in nutrients and protein, while being low in calories.

Another great thing about this recipe is that you can put the leftover ingredients in separate containers and make an easy salad for lunch or dinner the next day.

4. Healthy Chicken Tacos

This healthy chicken taco recipe is so easy and tasty. We like to make extra chicken and freeze it for the next time you’re in the mood for chicken tacos.

The ingredients also make for a great salad for lunch or dinner the next day!

5. Tex-Mex Beef Tacos

Using ground sirloin instead of regular ground beef keeps these beefy tacos lower in fat. Chipotle chiles in the adobo sauce adds some kick, while corn and black beans pump up the nutrients.

For this easy recipe, everything goes into one pot, except for the tortillas!

6. Super Simple Salmon Tacos with Citrus Salsa

Fish tacos are not only tasty, but fish is full of Omega-3 fatty acids, especially salmon. These tacos will have your skin glowing from all the super nutrients.

The citrus adds a lively zing. This is a great way of getting your kids to eat fish!

7. Faux Chorizo Tacos

If you’re avoiding meat, these faux “chorizo” tacos are just the thing for you. Tofu replaces the chorizo and the spices give it a meat-like flavor. The bell pepper, onion, and fresh cilantro add the nutrients your body needs.

8. Black Bean Tacos

These black bean tacos are super easy and have only a few ingredients. Lettuce and carrots give you the nutrient kick you need, while a little cheese amps up the yum factor. Black beans are a super healthy protein alternative to meat.

I talk A LOT about Buffet Style Meal Prep because it’s SIMPLE — and simple is sexy because it keeps you on track and helps you stick to your goals.

These healthy taco recipes work perfectly with the Buffet Style Meal Prep system.

On your meal prep day, you can prepare all of the single ingredient foods (meat, healthy fish, veggies, cheese, etc.) Then, when it’s meal time, you simply pull your containers out of the fridge and you’re good to go.

As I mentioned a couple of times above, I like to make extra chicken, meat, and fish and freeze it.

The other thing that’s great about this type of meal prep, specifically with tacos, is that everyone can put what they want on each night’s meal. If the kids don’t like fish, let them choose another protein for their tacos.

Meal prepping once a week lessens the stress of your dinner routine and helps avoid the last minute fast-food run. It also helps with the budget because you won’t make impulse grocery store buys or eat out as often.
