Dave’s Easy Butternut Squash Soup Recipe

My sweetie isn’t feeling too good, so I whipped up some soup for her. This is another one of my “If I can do it, you can do it” times, so here it is—my EASY butternut squash soup recipe.

But, first, I must digress. Gotta talk a minute about the perks of butternut squash.

Health Benefits of Butternut Squash

There are several key health benefits of butternut squash:

1. Boosts immunity

Most importantly, especially in this case, eating butternut squash gives your immune system a boost as a result of containing a good amount of Vitamin C. It’s not going to immediately cure you, but it’ll help your body fight off something worse.

2. Promotes “regularity”

Yep, butternut squash helps you poop, which keeps your gut healthy and contributes to the #1 benefit above. One cup contains almost 7 grams of fiber!

3. Reduces inflammation

You know inflammation isn’t good, right? It’s what’s behind arthritis and it’s also linked to cancer. The high antioxidant content of butternut squash is believed to have anti-inflammatory effects.

4. Helps with weight loss

One serving of butternut squash has almost zero fat, 26 carbs, and less than 100 calories. Remember the fiber I just mentioned? That’s what keeps you feeling fuller for longer.

5. Lowers blood pressure

The 500 mg of potassium in each serving of butternut squash helps to lower your blood pressure by counteracting the effect of sodium in your body.

6. Improves vision

Butternut squash has more than 300% of your RDA of Vitamin A, the “eye vitamin,” and is also a great source of the antioxidant lutein.

After it was done cooking, I added 2 tablespoons of butter and 3 teaspoons of parsley and brought some to my sweetie. Here’s the result of my easy butternut squash recipe…not bad for a dude, right?
