  1. Soften up the kale, broccoli, and sweet potatoes with a little coconut oil and water in a small skillet on the stovetop.
  2. When done, remove the pan from the heat and set aside drained veggies in a small bowl.
  3. Wipe the pan clean, add a little more coconut oil, heat just until hot, and pour in the pre-beaten eggs. Cover.
  4. Once the eggs are set, add the veggies.
  5. Fold it in half and serve. If you want, top with some salsa.
