P90X Salad Recipes: Chicken Broccoli Salad

I definitely suggest lightly steaming the broccoli to increase its cholesterol-lowering benefits. Basically, the fiber binds together better with the acids in your digestive tract when the broccoli has been steamed. Raw broccoli still has cholesterol-lowering ability—just not as much.

- 3 ounces cooked chicken breasts (chopped)
- 1-1/2 cups fresh broccoli florets (chopped)
- 1 carrot (grated)
- 1 Tablespoon walnuts (chopped)
- 2 Tablespoons red onion (chopped)
- 2 Tablespoons celery (chopped)
- 2 Tablespoons raisins
- 2 Tablespoons plain low-fat yogurt
- 1 teaspoon lemon juice
- 1 teaspoon agave nectar
- In a large bowl, combine chicken, broccoli, celery, onion, and raisins.
- In a separate small dish, whisk together yogurt, lemon juice, and agave nectar.
- Toss dressing with broccoli mixture until well coated.
- Cover and chill for 30 minutes.
