
Body Beast Breakfast: Dave’s Sweet Potato & Onion Omelet
Here’s one of my very own recipes that I use as a Body Beast breakfast (and sometimes dinner).
You’ll notice that this Sweet Potato Omelet recipe calls for a special ingredient—Beachbody’s Base Shake.         Ingredients    
                - 1/4 sweet potato (sliced)
 - 1/5 white onion (chopped)
 - coconut oil
 - 3 eggs
 - 1 scoop Beachbody's Base Shake (flavorless whey protein)
 - 1/2 avocado
 - salsa (to taste)

        Instructions    
                - Sauté sweet potato and onion on the stove with coconut oil.
 - Blend eggs and Base Shake in a blender.
 - Transfer the veggies on a plate and clean the pan. Add a bit of coconut oil and the egg mix to the clean pan and cook on LOW heat. [Be patient...even medium heat will cause the protein powder in the egg mix to appear burned.]
 - After a few minutes, add the veggie mix, cover the pan, and cook a little longer.
 - Carefully flip one side of the omelet over the other and let it finish cooking.
 - Top with salsa and/or avocado and chow down!
